Ingredients
  • 2 medium zucchini
  • 1 minced garlic clove
  • 1tbsp minced fresh mint
  • 4tsp Extra Virgin Olive Oil
  • 1/2tsp salt
  • 1/4tsp Black Pepper
Instructions
  1. Cut zucchini lengthwise in quarters, then in 1/2″ slices.
  2. In large skillet, heat 2 teaspoons of oil over medium high.
  3. Add zucchini, cook 3-4 minutes.
  4. Add garlic and cook additional 1 minute, stirring constantly.
  5. Move zucchini to medium bowl.
  6. Whisk 2 teaspoons of oil, mint, salt, and pepper, and pour over zucchini.
  7. Toss, and refrigerate 30 minutes until chilled
