  • 2 Small Cucumbers
  • 1 Minced Jalapeño Pepper
  • 3Cups Diced Watermelon
  • 1/2Cup Chopped and Pitted Kalamata Olives
  • 3/4 Cup Crumbled Feta
  • 3Tbsp Red Wine Vinegar
  • 6Tbsp Extra Virgin Olive Oil
  • 1/8Tsp salt
  • Pepper to Taste
  • 3Cups Baby Arugula Leaves
  1. Peel and chop cucumber. Remove membrane and seeds from jalapeño, and mince. Chop olives.
  2. In large bowl, gently toss watermelon, cucumber, jalapeño pepper, olives and feta
  3. Wisk red wine vinegar, salt, pepper and olive oil until emulsified. Pour over watermelon mixture and gently toss.
  4. Refrigerate at least 20 minutes, up to 2 hours.
  5. Before serving, add arugula and toss.
