Ingredients
- 2 Small Cucumbers
- 1 Minced Jalapeño Pepper
- 3 Cups Diced Watermelon
- 1/2 Cup Chopped and Pitted Kalamata Olives
- 3/4 Cup Crumbled Feta
- 3 Tbsp Red Wine Vinegar
- 6 Tbsp Extra Virgin Olive Oil
- 1/8 Tsp salt
- Pepper to Taste
- 3 Cups Baby Arugula Leaves
Instructions
- Peel and chop cucumber. Remove membrane and seeds from jalapeño, and mince. Chop olives.
- In large bowl, gently toss watermelon, cucumber, jalapeño pepper, olives and feta
- Wisk red wine vinegar, salt, pepper and olive oil until emulsified. Pour over watermelon mixture and gently toss.
- Refrigerate at least 20 minutes, up to 2 hours.
- Before serving, add arugula and toss.
