Ingredients

  • 2 Small Cucumbers
  • 1 Minced Jalapeño Pepper
  • 3 Cups Diced Watermelon
  • 1/2 Cup Chopped and Pitted Kalamata Olives
  • 3/4 Cup Crumbled Feta
  • 3 Tbsp Red Wine Vinegar
  • 6 Tbsp Extra Virgin Olive Oil
  • 1/8 Tsp salt
  • Pepper to Taste
  • 3 Cups Baby Arugula Leaves

Instructions

  1. Peel and chop cucumber. Remove membrane and seeds from jalapeño, and mince. Chop olives.
  2. In large bowl, gently toss watermelon, cucumber, jalapeño pepper, olives and feta
  3. Wisk red wine vinegar, salt, pepper and olive oil until emulsified. Pour over watermelon mixture and gently toss.
  4. Refrigerate at least 20 minutes, up to 2 hours.
  5. Before serving, add arugula and toss.
