Ingredients
  • 3 small summer squash
  • 3 small zucchini
  • 10oz canned diced red tomatoes with green chile peppers
  • 1/2cup fresh chopped red onion
  • 1pinch salt
  • 1 garlic close
Instructions
  1. Cut zucchini and summer squash into 1/4″ slices.
  2. In large saucepan, combine zucchini, squash, tomatoes with juice and peppers, onions, salt, and garlic clove.
  3. Bring to boil over medium high heat.
  4. Reduce heat to low and cook, partially covered, until vegetables are tender crisp, about 10-15 minutes, stirring frequently.
