Ingredients
- 3 small summer squash
- 3 small zucchini
- 10 oz canned diced red tomatoes with green chile peppers
- 1/2 cup fresh chopped red onion
- 1 pinch salt
- 1 garlic close
Instructions
- Cut zucchini and summer squash into 1/4" slices.
- In large saucepan, combine zucchini, squash, tomatoes with juice and peppers, onions, salt, and garlic clove.
- Bring to boil over medium high heat.
- Reduce heat to low and cook, partially covered, until vegetables are tender crisp, about 10-15 minutes, stirring frequently.
