Wilted Spinach with Pine Nuts and Garlic Recipe

Ingredients
  • 1/2oz pine nuts
  • 1lb fresh spinach leaves
  • 1tbsp Extra Virgin Olive Oil
  • 1/2tsp Minced Garlic
  • 1tbsp Sour Cream
  • 1/8tsp Black Pepper
Instructions
  1. In large skillet, add pine nuts and toast over medium-high heat for 2 minutes, stirring constantly. Transfer to small bowl and set aside.
  2. Wash spinach and drain, leaving some water on leaves.
  3. Heat skillet over medium-high. Add oil and garlic, and cook 30 seconds.
  4. Add spinach, and cook until wilted, about 3 minutes.
  5. Turn off heat, and toss gently with sour cream. Season with pepper and sprinkle with pine nuts. Serve.

If you’re avoiding dairy, omit the sour cream. The recipe will still taste great. A final drizzle of extra virgin olive oil, and a sprinkle of sea salt will finish this dish nicely, with or without the sour cream.
