Ingredients

  • 1/2 oz pine nuts
  • 1 lb fresh spinach leaves
  • 1 tbsp Extra Virgin Olive Oil
  • 1/2 tsp Minced Garlic
  • 1 tbsp Sour Cream
  • 1/8 tsp Black Pepper

Instructions

  1. In large skillet, add pine nuts and toast over medium-high heat for 2 minutes, stirring constantly. Transfer to small bowl and set aside.
  2. Wash spinach and drain, leaving some water on leaves.
  3. Heat skillet over medium-high. Add oil and garlic, and cook 30 seconds.
  4. Add spinach, and cook until wilted, about 3 minutes.
  5. Turn off heat, and toss gently with sour cream. Season with pepper and sprinkle with pine nuts. Serve.
