A rich mushroom gravy subtly flavored with shallots and wine

Ingredients
- 1 tbsp Extra Virgin Olive Oil
- 1/4 cup chopped shallots
- 2 chopped garlic cloves
- 2 cups fresh sliced wild mushrooms
- 1/3 cup red wine
- 2 tbsp Fresh Lemon Juice
- 1/4 tsp ground thyme
- 2 cups low-sodium vegetable broth
- 2 tbsp Cornstarch
- 1/8 tsp salt
- 1/8 tsp Black Pepper
Instructions
- In large saucepan, add oil, and heat over medium. Add shallots and cook 3 minutes. Add garlic and cook additional minute.
- Reduce heat to medium-low. Add mushrooms, and cook 5-7 minutes, stirring occasionally, until mushrooms have released their moisture.
- Add wine, lemon juice, and thyme. Bring to boil.
- Lower heat and simmer 5 minutes, or until most of the liquid evaporates.
- In mixing bowl, whisk broth and cornstarch. Add to saucepan and return to boil. Continue boiling, stirring constantly, 1 minute until thick.
- Season with salt and pepper
