Ingredients

  • 1 tbsp Extra Virgin Olive Oil
  • 1/4 cup chopped shallots
  • 2 chopped garlic cloves
  • 2 cups fresh sliced wild mushrooms
  • 1/3 cup red wine
  • 2 tbsp Fresh Lemon Juice
  • 1/4 tsp ground thyme
  • 2 cups low-sodium vegetable broth
  • 2 tbsp Cornstarch
  • 1/8 tsp salt
  • 1/8 tsp Black Pepper

Instructions

  1. In large saucepan, add oil, and heat over medium. Add shallots and cook 3 minutes. Add garlic and cook additional minute.
  2. Reduce heat to medium-low. Add mushrooms, and cook 5-7 minutes, stirring occasionally, until mushrooms have released their moisture.
  3. Add wine, lemon juice, and thyme. Bring to boil.
  4. Lower heat and simmer 5 minutes, or until most of the liquid evaporates.
  5. In mixing bowl, whisk broth and cornstarch. Add to saucepan and return to boil. Continue boiling, stirring constantly, 1 minute until thick.
  6. Season with salt and pepper
