  • 1oz rawskinless, boneless turkey breast
  • 2tbsp Olive Oil
  • 1 Chopped Onion
  • 1 chopped turnip
  • 1 chopped carrot
  • 1 chopped celery stalk
  • 1tbsp Chopped Fresh Parsley
  • 1tsp dry thyme
  • 1/4tsp Black Pepper
  • 14.5oz can low sodium chicken broth
  • 1 1/4cup Heavy Cream
  • 1/4cup frozen corn kernels
  • 1/2cup chopped fresh red pepper
  • 1 chopped scallion
  1. Cut turkey into 1” cubes.
  2. In saucepan, heat oil over medium-high. Add turkey and cook 6-8 minutes, turning once, until golden brown. Reduce heat to medium. Remove and set aside.
  3. Return saucepan to cook top, add onion, turnip, carrot, celery, parsley, thyme, and pepper.
  4. Add chicken stock, bring to a boil, then reduce heat, and simmer partially covered for 20 minutes.
  5. Add cream, turkey, corn, red bell pepper, and scallion. Stir to blend.
  6. Simmer 20 minutes, stirring occasionally.
  7. Allow the chowder to rest 10 minutes after cooking, to blend flavors.

You can use leftover turkey in this recipe. Just add the cooked turkey during the last 10 minutes of cooking.
