Ingredients
- 1 oz raw skinless, boneless turkey breast
- 2 tbsp Olive Oil
- 1 Chopped Onion
- 1 chopped turnip
- 1 chopped carrot
- 1 chopped celery stalk
- 1 tbsp Chopped Fresh Parsley
- 1 tsp dry thyme
- 1/4 tsp Black Pepper
- 14.5 oz can low sodium chicken broth
- 1 1/4 cup Heavy Cream
- 1/4 cup frozen corn kernels
- 1/2 cup chopped fresh red pepper
- 1 chopped scallion
Instructions
- Cut turkey into 1” cubes.
- In saucepan, heat oil over medium-high. Add turkey and cook 6-8 minutes, turning once, until golden brown. Reduce heat to medium. Remove and set aside.
- Return saucepan to cook top, add onion, turnip, carrot, celery, parsley, thyme, and pepper.
- Add chicken stock, bring to a boil, then reduce heat, and simmer partially covered for 20 minutes.
- Add cream, turkey, corn, red bell pepper, and scallion. Stir to blend.
- Simmer 20 minutes, stirring occasionally.
- Allow the chowder to rest 10 minutes after cooking, to blend flavors.
