Pan seared scallops in a good white wine sauce flavored with tarragon and fresh parsley.

Ingredients
- 3/4 tsp ground tarragon
- 1/4 tsp paprika
- 1/2 tsp Black Pepper
- 1 1/2 lb large scallops
- 1 tbsp Extra Virgin Olive Oil
- 1 tbsp Butter
- 1/2 cup white wine
- 2 tbsp Fresh Lemon Juice
- 1/4 tsp salt
- 2 tbsp chopped parsley
Instructions
- In small bowl, mix tarragon, paprika, and pepper.
- Season scallops with paprika mixture.
- In large skillet, place butter and oil and heat over medium-high until butter melts.
- Add scallops and cook for 3 minutes, turn and cook additional 2 minutes.
- Place scallops on plate and cover to keep warm.
- Pour wine in skillet, increase heat and boil for 45 seconds. Add lemon juice and salt.
- Drizzle over scallops and sprinkle with parsley.
