Ingredients

  • 3 tbsp Chopped Fresh Parsley
  • 2 minced garlic cloves
  • 1/2 tsp fresh grated lemon peel
  • 1/4 cup Low Sodium Chicken Broth
  • 24 fresh clams
  • 1 dash hot pepper sauce

Instructions

  1. In small bowl, combine parsley, garlic, lemon peel, and dash of hot sauce.
  2. In large pot, place chicken stock and clams. Bring chicken stock to boil and cook for 5 minutes, or until shells open. As clams open, scoop each one in its shell into a serving bowl, six to each bowl. If a clam doesn't open, cook for several minutes longer. If it still doesn't open, discard.
  3. Ladle broth over clams, and sprinkle parsley mixture over clams.
  4. Serve with small forks to pull the clams from their shells, and big spoons to sip the broth
