Ingredients

  • 1 Cup Fresh Thin Asparagus Spears Cut into 1" pieces
  • 3 Cups Salad Greens
  • 3 Radishes Thinly Sliced
  • 1 1/2 Tbsp Red Wine Vinegar
  • 1/2 Tsp Dijon Mustard
  • 1 1/2 Tbsp Crumbled Feta Cheese

Instructions

  1. Steam asparagus for 3 minutes until tender-crisp.
  2. Immediately dunk asparagus into ice bath, drain, and let dry on clean kitchen towel.
  3. In serving bowl, mix asparagus, greens, and radishes.
  4. In small bowl, whisk vinegar and mustard. Drizzle dressing over salad, toss to evenly coat, and top with feta.
