Ingredients
- 1 Cup Fresh Thin Asparagus Spears Cut into 1" pieces
- 3 Cups Salad Greens
- 3 Radishes Thinly Sliced
- 1 1/2 Tbsp Red Wine Vinegar
- 1/2 Tsp Dijon Mustard
- 1 1/2 Tbsp Crumbled Feta Cheese
Instructions
- Steam asparagus for 3 minutes until tender-crisp.
- Immediately dunk asparagus into ice bath, drain, and let dry on clean kitchen towel.
- In serving bowl, mix asparagus, greens, and radishes.
- In small bowl, whisk vinegar and mustard. Drizzle dressing over salad, toss to evenly coat, and top with feta.
