Ingredients

  • 20 oz frozen spinach
  • 14 oz canned artichokes hearts drained
  • 1 1/2 cup shredded Monterey Jack cheese
  • 1 tbsp Olive Oil
  • 1 cup chopped red onion
  • 1 clove garlic minced.
  • 2 tbsp all purpose flour
  • 1 1/2 cups Heavy Cream
  • 1/2 tsp salt
  • 1 pinch Black Pepper
  • 1/2 tsp Worcestershire sauce

Instructions

  1. Thaw spinach according to package directions. Drain and squeeze out excess water, until dry as possible.
  2. Chop artichoke hearts.
  3. Heat large skillet over medium, and add olive oil. Sauté onions 3-5 minutes until soft. Add garlic, and cook an additional minute. Add flour. Cook, stirring constantly, 30 seconds to 1 minute.
  4. Gradually stir in milk. Stir for about 5 minutes, until sauce thickens enough to coat the back of a spoon.
  5. Add spinach and cheese, stirring until cheese melts.
  6. Add artichoke hearts, season with salt, pepper, and Worcestershire sauce. Serve hot
