Ingredients
- 2 cup cooked chicken breasts diced
- 1 cup canned sweet yellow corn drained
- 1 fresh tomato equal to 1 cup
- 1 cup green peas frozen
- 1/2 green bell pepper chopped
- 1/2 cup red bell pepper sliced
- 1/3 cup low-sodium canned black beans
- 1 tbsp Olive Oil
- 1/4 cup Fresh Lime Juice
- 2 tsp cumin seeds
- 1 tbsp fresh coriander leaves
- 2 tsp Chili Powder
- 1 tsp Ground Oregano
Instructions
- In large serving bowl, combine all salad ingredients.
- In blender or food processor, pulse together all dressing ingredients.
- Add cooked chicken and dressing to salad, toss well to mix. Serve.
