Slow Cooker Pumpkin Sage Soup

Ingredients
  • 5cups Low Sodium Chicken Broth
  • 15oz cannedsolid-packed pumpkin
  • 2/3cup chopped leeks
  • 1cup diced carrots
  • 1cup diced celery
  • 1cup diced onion
  • 1tsp ground sage
  • 1/2tsp poultry seasoning
  • 1tsp salt
  • 1/2tsp Black Pepper
  • 1cup cream
  • 1/2cup grated Parmesan cheese
Instructions
  1. In 5-6 quart slow cooker, combine chicken broth, pumpkin, leeks, carrots, celery, onion, sage, poultry seasoning, salt, and pepper.
  2. Cover. Cook on low heat 6 to 8 hours, or on high heat for 3 to 4 hours.
  3. Stir in cream. Turn off heat. Ladle soup into bowls and sprinkle each serving with 1 tbsp Parmesan cheese.
