Asian spices flavor shrimp, celery, and water chestnuts served in lettuce leaves

Ingredients
- 1 lb large raw shrimp
- 1 tbsp peanut oil
- 1 cup fresh chopped celery
- 1/3 cup sliced water chestnuts
- 1/2 cup diced orange or red bell pepper
- 1 tsp ½minced garlic
- 2 tsp fresh minced ginger root
- 1 1/2 tbsp hoisin sauce
- 1 1/2 tbsp light soy sauce
- 1 1/2 tbsp rice vinegar
- 8 Boston lettuce leaves
- 1/3 cup dry roasted unsalted peanuts
- 1 tbsp chopped fresh cilantro
Instructions
- Peel and devein shrimp.
- In wok or large skillet, heat oil over medium.
- Add shrimp. Stir-fry 2-3 minutes until opaque and pink. Transfer shrimp to bowl and set aside.
- Add celery, water chestnuts, bell pepper, garlic, ginger. Stir-fry 2 to 3 minutes until vegetables are crisp-tender.
- Return shrimp to wok or skillet.
- Add hoisin sauce, soy sauce and vinegar. Cook for 1 minute, or until heated through.
- Divide shrimp and vegetables evenly among lettuce leaves. Sprinkle with peanuts and chopped cilantro.
