Ingredients

  • 1 lb large raw shrimp
  • 1 tbsp peanut oil
  • 1 cup fresh chopped celery
  • 1/3 cup sliced water chestnuts
  • 1/2 cup diced orange or red bell pepper
  • 1 tsp ½minced garlic
  • 2 tsp fresh minced ginger root
  • 1 1/2 tbsp hoisin sauce
  • 1 1/2 tbsp light soy sauce
  • 1 1/2 tbsp rice vinegar
  • 8 Boston lettuce leaves
  • 1/3 cup dry roasted unsalted peanuts
  • 1 tbsp chopped fresh cilantro

Instructions

  1. Peel and devein shrimp.
  2. In wok or large skillet, heat oil over medium.
  3. Add shrimp. Stir-fry 2-3 minutes until opaque and pink. Transfer shrimp to bowl and set aside.
  4. Add celery, water chestnuts, bell pepper, garlic, ginger. Stir-fry 2 to 3 minutes until vegetables are crisp-tender.
  5. Return shrimp to wok or skillet.
  6. Add hoisin sauce, soy sauce and vinegar. Cook for 1 minute, or until heated through.
  7. Divide shrimp and vegetables evenly among lettuce leaves. Sprinkle with peanuts and chopped cilantro.
