  • 1 whole jalapeño
  • 1 medium cucumber
  • 1cup red bell pepperchopped
  • 1cup green bell pepperchopped
  • 1/2cup Red Onionchopped
  • 1/4cup Scallionschopped
  • 2 Fresh Tomatoeschopped
  • 2cup low sodium vegetable juice
  • 2cup unsalted chicken broth
  • 2tsp Fresh Thyme
  • 3tbsp Fresh Lime Juice
  • 6oz cooked shrimp
  • 1/8tsp hot pepper sauce
  • 6 sprigs fresh cilantro
  1. Remove stems, seeds, and membrane from jalapeño pepper. Mince
  2. In large bowl, combine cucumber, peppers, onions, tomatoes, vegetable juice, chicken broth, thyme, jalapeño, and lime juice.
  3. In blender or food processor, puree half of mixture. Pour over remaining chopped vegetables and broth in bowl.
  4. Chill soup 3 – 4 hours; stir in hot pepper sauce as desired.
  5. Ladle 1 cup gazpacho into each bowl and top with 1 ounce shrimp. Garnish with cilantro. Serve.
