Ingredients
- 1 whole jalapeño
- 1 medium cucumber
- 1 cup red bell pepper chopped
- 1 cup green bell pepper chopped
- 1/2 cup Red Onion chopped
- 1/4 cup Scallions chopped
- 2 Fresh Tomatoes chopped
- 2 cup low sodium vegetable juice
- 2 cup unsalted chicken broth
- 2 tsp Fresh Thyme
- 3 tbsp Fresh Lime Juice
- 6 oz cooked shrimp
- 1/8 tsp hot pepper sauce
- 6 sprigs fresh cilantro
Instructions
- Remove stems, seeds, and membrane from jalapeño pepper. Mince
- In large bowl, combine cucumber, peppers, onions, tomatoes, vegetable juice, chicken broth, thyme, jalapeño, and lime juice.
- In blender or food processor, puree half of mixture. Pour over remaining chopped vegetables and broth in bowl.
- Chill soup 3 - 4 hours; stir in hot pepper sauce as desired.
- Ladle 1 cup gazpacho into each bowl and top with 1 ounce shrimp. Garnish with cilantro. Serve.
