Ingredients

  • 1 whole jalapeño
  • 1 medium cucumber
  • 1 cup red bell pepper chopped
  • 1 cup green bell pepper chopped
  • 1/2 cup Red Onion chopped
  • 1/4 cup Scallions chopped
  • 2 Fresh Tomatoes chopped
  • 2 cup low sodium vegetable juice
  • 2 cup unsalted chicken broth
  • 2 tsp Fresh Thyme
  • 3 tbsp Fresh Lime Juice
  • 6 oz cooked shrimp
  • 1/8 tsp hot pepper sauce
  • 6 sprigs fresh cilantro

Instructions

  1. Remove stems, seeds, and membrane from jalapeño pepper. Mince
  2. In large bowl, combine cucumber, peppers, onions, tomatoes, vegetable juice, chicken broth, thyme, jalapeño, and lime juice.
  3. In blender or food processor, puree half of mixture. Pour over remaining chopped vegetables and broth in bowl.
  4. Chill soup 3 - 4 hours; stir in hot pepper sauce as desired.
  5. Ladle 1 cup gazpacho into each bowl and top with 1 ounce shrimp. Garnish with cilantro. Serve.
