Ingredients

  • 1 Red Onion
  • 1 large green bell pepper
  • 8 oz large raw shrimp
  • 1 tbsp Extra Virgin Olive Oil
  • 2 Medium Garlic Cloves
  • 2 tsp Worcestershire sauce
  • 1 tbsp Fresh Lemon Juice
  • 1 tsp Ground Cumin
  • 1 pinch Black Pepper
  • 1/4 cup chopped fresh cilantro
  • 2 low-carb 8" tortillas
  • 1 cup shredded fresh romaine lettuce
  • 1/2 cup chopped tomato
  • 1/4 cup hot salsa

Instructions

  1. Peel and slice onion.
  2. Remove stems, seeds, and membrane from bell pepper. Cut into 1/2" slices.
  3. Chop garlic.
  4. Peel and devein shrimp.
  5. In large skillet, add oil, and heat over medium-high.
  6. Add onion and pepper. Cook 3 minutes until translucent, stirring frequently. Add garlic. Cook for an additional minute.
  7. Add shrimp and cook 3 to 5 minutes, stirring frequently, until opaque.
  8. Add Worcestershire sauce, lemon juice, cumin, pepper, and cilantro. Reduce heat to low, and cook 1 minute.
  9. Wrap tortillas in damp paper towels. Microwave on high for 1 minute.
  10. Place shrimp mixture on tortillas and top with tomatoes, lettuce, and salsa
