Ingredients
- 1 Red Onion
- 1 large green bell pepper
- 8 oz large raw shrimp
- 1 tbsp Extra Virgin Olive Oil
- 2 Medium Garlic Cloves
- 2 tsp Worcestershire sauce
- 1 tbsp Fresh Lemon Juice
- 1 tsp Ground Cumin
- 1 pinch Black Pepper
- 1/4 cup chopped fresh cilantro
- 2 low-carb 8" tortillas
- 1 cup shredded fresh romaine lettuce
- 1/2 cup chopped tomato
- 1/4 cup hot salsa
Instructions
- Peel and slice onion.
- Remove stems, seeds, and membrane from bell pepper. Cut into 1/2" slices.
- Chop garlic.
- Peel and devein shrimp.
- In large skillet, add oil, and heat over medium-high.
- Add onion and pepper. Cook 3 minutes until translucent, stirring frequently. Add garlic. Cook for an additional minute.
- Add shrimp and cook 3 to 5 minutes, stirring frequently, until opaque.
- Add Worcestershire sauce, lemon juice, cumin, pepper, and cilantro. Reduce heat to low, and cook 1 minute.
- Wrap tortillas in damp paper towels. Microwave on high for 1 minute.
- Place shrimp mixture on tortillas and top with tomatoes, lettuce, and salsa
