Ingredients
  • 1 raw whole chicken
  • 8 garlic cloves
  • 4tbsp fresh rosemary
  • 1/2tsp salt
  • 1/4tsp Black Pepper
  • Cooking Spray
Instructions
  1. Preheat oven to 425°F.
  2. Line roasting pan with foil. Set aside.
  3. Remove giblets and neck from chicken (which can be frozen to make stock later). Trim away excess fat.
  4. Beginning at neck cavity, loosen skin from breast and drumsticks by inserting fingers, gently separating skin and meat.
  5. Peel and smash garlic cloves.
  6. Mix garlic with rosemary. Massage mixture over and under skin and inside body cavity. Season whole chicken with salt and pepper.
  7. Place chicken on prepared roasting pan. Bake 10 minutes. Lower heat to 375°F. Bake 1 hour until internal temperature reaches 165°F. Let sit 5 minutes before carving.
