Ingredients
- 1 raw whole chicken
- 8 garlic cloves
- 4 tbsp fresh rosemary
- 1/2 tsp salt
- 1/4 tsp Black Pepper
- Cooking Spray
Instructions
- Preheat oven to 425°F.
- Line roasting pan with foil. Set aside.
- Remove giblets and neck from chicken (which can be frozen to make stock later). Trim away excess fat.
- Beginning at neck cavity, loosen skin from breast and drumsticks by inserting fingers, gently separating skin and meat.
- Peel and smash garlic cloves.
- Mix garlic with rosemary. Massage mixture over and under skin and inside body cavity. Season whole chicken with salt and pepper.
- Place chicken on prepared roasting pan. Bake 10 minutes. Lower heat to 375°F. Bake 1 hour until internal temperature reaches 165°F. Let sit 5 minutes before carving.
