Ingredients
- 4 whole red snapper
- 1 cup Fresh Lime Juice
- 1 cup cold water
- 4 oz orange juice
- 1 tbsp salt
- 2 large tomatoes
- 2 large onions
- 1 cup white wine
- 4 green onions
- 2 tbsp chopped parsley
- 1 tbsp Fresh Thyme
- 2 tbsp Fresh Lime Juice
- 1 tbsp Olive Oil
- 1/2 oz salt
- 1/2 tsp Ground Allspice
- 1/4 tsp Black Pepper
- 1/4 tsp ground red cayenne pepper
- 3 tsp Minced Garlic
- Cooking Spray
Instructions
- Clean, gut, and scale fish, or have your fishmonger do it. Slice diamond patterned cuts into surface of fish.
- In resealable plastic bag, add lime juice, water, orange juice, and salt.
- Place fish in bag and seal. Turn to coat, and refrigerate 20 minutes, turning bag once.
- Preheat oven to 425°F.
- Line roasting pan with foil.
- Peel and slice onion. Cut tomato in small wedges. Arrange tomatoes and onions in roasting pan. Add wine.
- Using a food processor or blender, pulse green onions, parsley, thyme, lime juice, oil, salt, allspice, black and cayenne pepper, and garlic until smooth.
- Transfer fish from bag to work surface. Discard marinade.
- Rub spice mixture onto both sides of fish.
- Coat broiler rack with cooking spray. Transfer fish to rack. Place broiler rack in roasting pan on top of tomatoes and onions. Cover fish with foil and bake 30 minutes.
- Remove foil and roast another 45 minutes, until internal temperature reaches 145°F. Remove skin from fish and discard
