Ingredients

  • 1 lb lean Pork tenderloin
  • 1 Medium Onion
  • 8 oz fresh mushrooms
  • 2 tbsp Red Wine Vinegar
  • 2 tbsp Extra Virgin Olive Oil
  • 1/2 tsp Italian seasoning
  • Cooking Spray

Instructions

  1. Preheat grill to medium.
  2. Trim excess fat and skin from pork. Cut into 1-1/2" cubes.
  3. Peel and cut onion into quarters. Separate into pieces.
  4. Thread meat and vegetables on six, 12-inch metal skewers.
  5. In small bowl, whisk red wine vinegar, olive oil, and Italian herbs. Set aside for basting.
  6. Coat grill grate with cooking spray.
  7. Place kabobs on grill and cook 10-12 minutes, turning occasionally. Using a clean brush, baste kabobs with dressing each time kabobs are turned.
