Pork tenderloin creates tasty pork kabobs with mushrooms basted with red wine vinaigrette.

Ingredients
- 1 lb lean Pork tenderloin
- 1 Medium Onion
- 8 oz fresh mushrooms
- 2 tbsp Red Wine Vinegar
- 2 tbsp Extra Virgin Olive Oil
- 1/2 tsp Italian seasoning
- Cooking Spray
Instructions
- Preheat grill to medium.
- Trim excess fat and skin from pork. Cut into 1-1/2" cubes.
- Peel and cut onion into quarters. Separate into pieces.
- Thread meat and vegetables on six, 12-inch metal skewers.
- In small bowl, whisk red wine vinegar, olive oil, and Italian herbs. Set aside for basting.
- Coat grill grate with cooking spray.
- Place kabobs on grill and cook 10-12 minutes, turning occasionally. Using a clean brush, baste kabobs with dressing each time kabobs are turned.
