  • 2lb boneless skinless chicken breasts
  • 6oz plain whole milk yogurt
  • 1/4cup Fresh Lemon Juice
  • 1 1/2tbsp Dijon Mustard
  • 1tsp Minced Garlic
  • 1/2tsp oregano leaves
  • Cooking Spray
  • 2tbsp Unsalted Butter
  • 1cup whole wheat bread crumbs
  • 1cup Ground Almonds
  • 1/4cup Parmesan cheesegrated
  1. Cut chicken breast into eight, 4-ounce pieces.
  2. In mixing bowl, combine yogurt, lemon juice, mustard, garlic, and oregano.
  3. Place chicken in mixing bowl, turning to coat. Cover and marinate 2 hours, or overnight.
  4. Drain marinade from chicken. Discard marinade.
  5. Lightly coat baking sheet with nonstick cooking spray.
  6. Melt butter.
  7. Combine breadcrumbs, ground almonds, melted butter, and cheese. Press chicken into bread crumb mixture to coat.
  8. Place chicken on tray, cover and refrigerate 30-60 minutes.
  9. Preheat oven to 350°F.
  10. Remove chicken from refrigerator. Bake 45-60 minutes, until internal temperature reaches 165°F.
