Ingredients
  • 4 small zucchini
  • 2 Eggs
  • 6tbsp whole-wheat flour
  • 6tbsp grated or shredded Parmesan cheesedivided
  • 1tsp Ground Oregano
  • 1/2tsp dried basil
  • 1tsp paprika
  • 1/2tsp Garlic Powder
  • 1/2tsp sea salt
  • Cooking Spray
  • 1tbsp Olive Oil
Instructions
  1. Preheat oven to 350°F.
  2. Cut zucchini into 1/4″ slices.
  3. In large shallow bowl, whisk eggs.
  4. In a baking dish, mix flour, 3 tbsp cheese, oregano, basil, paprika, garlic powder, and salt.
  5. Place zucchini slices in egg. Toss to coat.
  6. Place zucchini slices in flour mixture, and turn to coat evenly.
  7. Line baking sheet with foil, coat with cooking spray. Arrange zucchini slices. Drizzle with olive oil.
  8. Bake 15 minutes, until zucchini is lightly browned and al dente. Sprinkle with remaining Parmesan.
