Ingredients
- 4 small zucchini
- 2 Eggs
- 6 tbsp whole-wheat flour
- 6 tbsp grated or shredded Parmesan cheese divided
- 1 tsp Ground Oregano
- 1/2 tsp dried basil
- 1 tsp paprika
- 1/2 tsp Garlic Powder
- 1/2 tsp sea salt
- Cooking Spray
- 1 tbsp Olive Oil
Instructions
- Preheat oven to 350°F.
- Cut zucchini into 1/4" slices.
- In large shallow bowl, whisk eggs.
- In a baking dish, mix flour, 3 tbsp cheese, oregano, basil, paprika, garlic powder, and salt.
- Place zucchini slices in egg. Toss to coat.
- Place zucchini slices in flour mixture, and turn to coat evenly.
- Line baking sheet with foil, coat with cooking spray. Arrange zucchini slices. Drizzle with olive oil.
- Bake 15 minutes, until zucchini is lightly browned and al dente. Sprinkle with remaining Parmesan.
