Ingredients

  • 1 oz shredded whole milk mozzarella cheese
  • 4 fresh basil leaves
  • cup ½fresh plum tomatoes
  • 1/2 tsp salt divided
  • 1 lb boneless skinless chicken breasts
  • 3 tbsp whole-wheat flour
  • 1/4 tsp paprika
  • 1/4 tsp Black Pepper
  • 1 tbsp Olive Oil

Instructions

  1. Preheat oven to 375°F.
  2. Chop basil and tomato.
  3. In small bowl, mix cheese, basil, tomatoes, and 1/4 teaspoon of salt.
  4. Slice chicken breasts horizontally, making large pocket.
  5. Portion tomato mixture among chicken breasts, and stuff. Secure closed with toothpick.
  6. In shallow plate, gently mix flour, paprika, pepper, and remaining 1/4 teaspoon of salt. Dredge each chicken breast, coating well.
  7. In large oven-proof skillet, heat oil over medium. Cook chicken 4-5 minutes per side.
  8. Move to oven and cook, uncovered, 10-12 minutes until internal temperature reaches 165°F.
