Chicken breasts stuffed with fresh mozzarella, tomatoes, and basil

Ingredients
- 1 oz shredded whole milk mozzarella cheese
- 4 fresh basil leaves
- cup ½fresh plum tomatoes
- 1/2 tsp salt divided
- 1 lb boneless skinless chicken breasts
- 3 tbsp whole-wheat flour
- 1/4 tsp paprika
- 1/4 tsp Black Pepper
- 1 tbsp Olive Oil
Instructions
- Preheat oven to 375°F.
- Chop basil and tomato.
- In small bowl, mix cheese, basil, tomatoes, and 1/4 teaspoon of salt.
- Slice chicken breasts horizontally, making large pocket.
- Portion tomato mixture among chicken breasts, and stuff. Secure closed with toothpick.
- In shallow plate, gently mix flour, paprika, pepper, and remaining 1/4 teaspoon of salt. Dredge each chicken breast, coating well.
- In large oven-proof skillet, heat oil over medium. Cook chicken 4-5 minutes per side.
- Move to oven and cook, uncovered, 10-12 minutes until internal temperature reaches 165°F.
