Ingredients

  • 6 lb lamb leg
  • 6 Medium Garlic Cloves
  • 2 tbsp coriander seeds
  • 2 tbsp lemon zest
  • 1 tbsp Olive Oil
  • 1 tsp cumin seeds
  • 1/2 tsp salt
  • 1/2 tsp Black Pepper

Instructions

  1. Preheat oven to 325°F.
  2. Peel and cut garlic into slivers.
  3. Trim fat from meat. Cut several 1/2" wide slits in top and sides of lamb. Insert garlic slivers into slits.
  4. In small bowl, mix coriander seeds, lemon zest, olive oil, cumin seeds, salt, and pepper.
  5. Rub surface of meat with spice mixture.
  6. Line roasting pan with foil.
  7. Place roast in oven. Cook 1-3/4 to 2-1/4 hours until internal temperature reaches 140°F.
  8. Remove from oven, cover lightly with foil and let stand 15 minutes until internal temperature reaches 145°F.
