A tenderly roasted leg of lamb flavored with coriander and cumin

Ingredients
- 6 lb lamb leg
- 6 Medium Garlic Cloves
- 2 tbsp coriander seeds
- 2 tbsp lemon zest
- 1 tbsp Olive Oil
- 1 tsp cumin seeds
- 1/2 tsp salt
- 1/2 tsp Black Pepper
Instructions
- Preheat oven to 325°F.
- Peel and cut garlic into slivers.
- Trim fat from meat. Cut several 1/2" wide slits in top and sides of lamb. Insert garlic slivers into slits.
- In small bowl, mix coriander seeds, lemon zest, olive oil, cumin seeds, salt, and pepper.
- Rub surface of meat with spice mixture.
- Line roasting pan with foil.
- Place roast in oven. Cook 1-3/4 to 2-1/4 hours until internal temperature reaches 140°F.
- Remove from oven, cover lightly with foil and let stand 15 minutes until internal temperature reaches 145°F.
