Ingredients
- 9 cups no salt chicken broth
- 3 tbsp chopped fresh jalapeno chili peppers without seeds
- 2 cups chopped fresh cilantro
- 2 ripe avocados
- 1/8 tsp salt
Instructions
- In large saucepan, over medium high, bring broth to boil. Turn off heat.
- Cut avocados in half, remove pit, and scoop out flesh into small bowl.
- Add peppers, cilantro, and salt. Mash with fork, leaving avocado slightly chunky.
- To serve, scoop heaping tablespoon of avocado mixture into each soup bowl. Ladle cup of hot broth around avocado mixture. Serve
