Ingredients
- 4 romaine leaves
- 2 medium celery stalks
- 1 scallion
- 1 medium cucumber
- 4 oz cooked shrimp tails removed
- 4 oz lump crabmeat (cooked or canned drained)
- 1 cup Fresh Cherry Tomatoes
- juice of 1 medium lime
- 2 tablespoons Extra Virgin Olive Oil
- 1 tsp coarse salt
Instructions
- Place lettuce leaves on four plates.
- Finely chop celery and scallion (white and light green parts).
- Peel and cut cucumber into 1/2" slices.
- In small bowl, combine shrimp, crab, and celery with 1 tablespoon of the lime juice and the oil.
- Mound the shrimp-crab mixture on top of each romaine leaf.
- Arrange cucumber slices and tomatoes in a circle.
- Sprinkle scallion and drizzle remainder of lime juice over each plate.
- Finish with a pinch of salt.
