Ingredients

  • 4 romaine leaves
  • 2 medium celery stalks
  • 1 scallion
  • 1 medium cucumber
  • 4 oz cooked shrimp tails removed
  • 4 oz lump crabmeat (cooked or canned drained)
  • 1 cup Fresh Cherry Tomatoes
  • juice of 1 medium lime
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 tsp coarse salt

Instructions

  1. Place lettuce leaves on four plates.
  2. Finely chop celery and scallion (white and light green parts).
  3. Peel and cut cucumber into 1/2" slices.
  4. In small bowl, combine shrimp, crab, and celery with 1 tablespoon of the lime juice and the oil.
  5. Mound the shrimp-crab mixture on top of each romaine leaf.
  6. Arrange cucumber slices and tomatoes in a circle.
  7. Sprinkle scallion and drizzle remainder of lime juice over each plate.
  8. Finish with a pinch of salt.
