Ingredients
  • Cooking Spray
  • 1 3/4Cup Almond Flour
  • 1/4Cup Coconut Flour
  • 1/4cup Flax Meal
  • 2tsp Baking Soda
  • 1tsp Ground Cinnamon
  • 1/2tsp Ground Ginger
  • 3 Large Eggs
  • 1/2Cup Coconut Cooking Oil
  • 1/4Cup Melted Butter
  • 1 Medium Grated Apple
  • 1Cup Grated Raw Carrot
  • 3/4Cup Unsweetened Coconut Flakes
  • 2 Raw Bananas
  • 2tbsp Molasses
  • 2tsp Vanilla
  • 1/2tsp Almond Extract
Instructions
  1. Preheat oven to 350° F.
  2. Spray two mini muffin pans (each making 24 mini-muffins) with cooking spray.
  3. Sift the dry ingredients together in a large bowl.
  4. In a separate large bowl, combine eggs, coconut oil, cooled/melted butter, grated apple and carrot, mashed bananas, molasses, vanilla, and almond extract. Mix well.
  5. Add the dry ingredients to the wet and mix just until combined.
  6. Fill each muffin cavity to the top.
  7. Cook for 15 minutes, or until an inserted toothpick comes out clean
