Ingredients
  • 1lb large raw shrimp
  • 1tbsp Extra Virgin Olive Oil
  • 1cup minced onions
  • 2 minced garlic cloves
  • 4cups canned unsalted diced tomatoes
  • 2tbsp Fresh Lemon Juice
  • 1/2tsp ground coriander
  • 1/4tsp Ground Ginger
  • 1/8tsp Ground Cayennered pepper
  • 1/4tsp Ground Cumin
  • 4 cilantro sprigs
Instructions
  1. In nonstick skillet, heat oil to medium. Sauté onion 3 minutes, add garlic and sauté additional 1 minute.
  2. Add tomatoes, lemon juice, coriander, ginger, cayenne, pepper, and cumin. Bring to boil, reduce heat to low. Cover and simmer 15 minutes, stirring several times.
  3. Add shrimp, stir gently, cover and cook 3-5 minutes, until shrimp is pink and opaque. Garnish with cilantro.
