Jumbo shrimp seasoned with coriander, ginger and cumin, sautéed with onions, garlic, and tomatoes

Ingredients
- 1 lb large raw shrimp
- 1 tbsp Extra Virgin Olive Oil
- 1 cup minced onions
- 2 minced garlic cloves
- 4 cups canned unsalted diced tomatoes
- 2 tbsp Fresh Lemon Juice
- 1/2 tsp ground coriander
- 1/4 tsp Ground Ginger
- 1/8 tsp Ground Cayenne red pepper
- 1/4 tsp Ground Cumin
- 4 cilantro sprigs
Instructions
- In nonstick skillet, heat oil to medium. Sauté onion 3 minutes, add garlic and sauté additional 1 minute.
- Add tomatoes, lemon juice, coriander, ginger, cayenne, pepper, and cumin. Bring to boil, reduce heat to low. Cover and simmer 15 minutes, stirring several times.
- Add shrimp, stir gently, cover and cook 3-5 minutes, until shrimp is pink and opaque. Garnish with cilantro.
