  • 1cup Fresh Sliced Strawberries
  • 1/2cup fresh raspberries
  • 1/2cup fresh blueberries
  • 13oz flevaporated milk
  • 1/4cup all natural agave nectar
  • 1/4cup whole-wheat flour
  • 1/4cup white all purpose flour
  • 1tsp Vanilla Extract
  • 4 Eggs
  • 1/4cup canola oil
  • 1/4tsp Almond Extract
  • 1/3cup flaked unsweetened coconut
  1. Preheat oven to 350°F.
  2. Coat 10″ tart pan with cooking spray.
  3. Place berries in pie plate; set aside.
  4. Shake evaporated milk and pour into food processor fitted with steel blade. Add agave nectar, flours, vanilla, eggs, oil, and almond extract. Process until smooth, scraping sides.
  5. Add coconut and pulse 2 times.
  6. Pour mixture over fruit and bake 45 to 55 minutes or until golden brown and knife inserted in center comes out clean.
  7. Cool on rack about 30 minutes and refrigerate about 1 hour before serving.
  8. Just before serving, sprinkle powered sugar through a sieve over the top of the pie.
