Ham and Vegetable Gumbo

  • 12oz honey-smoked ham
  • 2tbsp canola oil
  • 1cup freshchopped red onion
  • 1cup freshchopped celery
  • 1cup chopped green bell peppers
  • 2 chopped garlic cloves
  • 1tsp oregano leaves
  • 1tsp ground thyme
  • 2 Bay Leaves
  • 1/2 head fresh red cabbage
  • 9cups cold water
  • 7oz fresh spinach leaves
  • 1 1/2cups choppedfresh watercress
  • 1/2tsp Ground Allspice
  • 1/4tsp ground nutmeg
  • 1pinch Ground Cayennered pepper
  • 1pinch salt
  • 1pinch Black Pepper
  1. Trim fat and rind from ham. Set aside.
  2. Dice ham into small pieces.
  3. In large stock pot, heat ham fat and oil over medium.
  4. Stir in ham, onion, celery, green pepper, garlic, oregano, thyme, and bay leaves. Cook 5 minutes, stirring occasionally.
  5. Chop cabbage. Add cabbage and water to pot. Bring to boil. Reduce heat, and simmer 20 minutes.
  6. Add spinach and watercress. Return to boil. Reduce heat to low and simmer 1 minute.
  7. Add allspice, nutmeg, salt, black pepper, and cayenne.
  8. Remove ham fat. Ladle into soup bowls
