A hearty soup with plenty of herbs and vegetables

Ingredients
- 12 oz honey-smoked ham
- 2 tbsp canola oil
- 1 cup fresh chopped red onion
- 1 cup fresh chopped celery
- 1 cup chopped green bell peppers
- 2 chopped garlic cloves
- 1 tsp oregano leaves
- 1 tsp ground thyme
- 2 Bay Leaves
- 1/2 head fresh red cabbage
- 9 cups cold water
- 7 oz fresh spinach leaves
- 1 1/2 cups chopped fresh watercress
- 1/2 tsp Ground Allspice
- 1/4 tsp ground nutmeg
- 1 pinch Ground Cayenne red pepper
- 1 pinch salt
- 1 pinch Black Pepper
Instructions
- Trim fat and rind from ham. Set aside.
- Dice ham into small pieces.
- In large stock pot, heat ham fat and oil over medium.
- Stir in ham, onion, celery, green pepper, garlic, oregano, thyme, and bay leaves. Cook 5 minutes, stirring occasionally.
- Chop cabbage. Add cabbage and water to pot. Bring to boil. Reduce heat, and simmer 20 minutes.
- Add spinach and watercress. Return to boil. Reduce heat to low and simmer 1 minute.
- Add allspice, nutmeg, salt, black pepper, and cayenne.
- Remove ham fat. Ladle into soup bowls
