Ingredients

  • 1 Zucchini
  • 2 Tsp Olive Oil
  • 2 Tsp Fresh Lemon Juice
  • 1/2 Tsp Minced Garlic
  • 1/4 Tsp Black Pepper
  • 1 Pinch salt

Instructions

  1. Cut zucchini lengthwise into spears.
  2. In medium-sized bowl, combine oil, lemon juice, garlic, pepper, and salt.
  3. Add zucchini to bowl, toss to coat, and let stand for 10 minutes.
  4. Preheat grill to medium. Pierce several holes in a sheet of aluminum foil, or use a grill basket.
  5. Place zucchini on foil or in a grill basket, and place on grill.
  6. Cook 4-5 minutes, or until tender-crisp.
