Ingredients
- 1/2 cup Mayonnaise
- 1 tsp Dijon Mustard
- 1 tsp vinegar
- 1/4 tsp salt
- 1/4 tsp Black Pepper
- 3 large hard-boiled eggs
- 1/2 cup Red Onion
- 32 oz frozen baby peas
- 1 tsp Fresh Parsley chopped
Instructions
- In small glass bowl, mix mayonnaise, mustard, vinegar, salt, and pepper to make dressing.
- Chop hard boiled eggs and finely chop red onion. Place in separate medium bowl and add peas.
- Add dressing to pea mixture. Blend well.
- Refrigerate for at least an hour before serving. Garnish with parsley.
