Ingredients
- 3 medium zucchini
- 3 medium summer squash
- 1 Red Onion
- 6 Medium Garlic Cloves
- 1 tbsp Olive Oil
- 1/2 tsp salt
- 1/4 tsp Black Pepper
- Cooking Spray
Instructions
- Preheat oven to 450°F.
- Slice and quarter zucchini, yellow squash, and onion. Peel and mince garlic cloves.
- In medium bowl combine zucchini, yellow squash, onion, garlic, oil, salt, and pepper. Toss well.
- Lightly coat 13" x 9" x 2" glass pan with cooking spray.
- Arrange squash mixture evenly in pan and bake 30 minutes or until vegetables are tender, stirring every 15 minutes.
