Ingredients

  • 1 Medium Garlic Clove
  • 1/2 cup canned low-sodium garbanzo beans (chickpeas)
  • 2 tsp Olive Oil
  • 1/4 cup chopped red bell peppers
  • 1 lb fresh spinach leaves
  • 1 pinch salt
  • 1 pinch Black Pepper

Instructions

  1. Mince garlic. Drain and rinse garbanzo beans.
  2. In large skillet, heat olive oil over medium high. Add bell pepper and sauté 5 minutes. Add garlic. Sauté additional 1 minute.
  3. Add beans and cook 2 minutes until beans are thoroughly heated.
  4. Add spinach, salt, and pepper. Cook, stirring often, until spinach wilts, about 3 minutes. Serve
