Ingredients
- Butter Flavored Cooking Spray
- 5 Egg Whites
- 3 Tbsp Unsweetened Baking Chocolate
- 1 Cup Unsweetened Cocoa Powder
- 1/2 Cup Ground Almonds
- 1/4 Cup Granulated Splenda
- 1/2 Tbsp Sour Cream
- 2 Egg Yolks
- 1/4 Tsp salt
- 1/4 Tsp Almond Extract
- 1 Tsp Vanilla Extract
- 2 Tbsp Unsalted Butter
- 1 Tbsp Granulated Sugar
- 1 Tbsp Slivered Almonds
Instructions
- Preheat oven to 350°F.
- Lightly coat 9-inch springform pan with butter-flavored cooking spray.
- Chop chocolate into 1/4 oz pieces and place in microwave-safe bowl. Microwave on medium high for 30 seconds. Remove bowl and stir chocolate. Return to microwave for 15 seconds, remove and stir. Repeat until chocolate is smooth and melted. (Or melt chocolate over double boiler.)
- Scrape chocolate into medium mixing bowl.
- Stir in cocoa, ground almonds, Splenda, sour cream, egg yolks, salt, almond extract and vanilla extract.
- In bowl of electric mixer, beat egg whites and sugar on high until stiff, glossy peaks form.
- Stir 1/4 of egg whites into cocoa batter to lighten. With spatula, fold remaining egg whites into batter
- Spoon batter into prepared springform pan and gently smooth top.
- Bake for 30 minutes. Remove from oven and let stand until cool.
- Loosen edges of pan and remove cake. Cake will deflate.
- Slice, sprinkle with slivered almonds, and serve.
