  • 1 medium tomato
  • 1 yellow tomato
  • 1tbsp Olive Oil
  • 1 1/2cups fresh chopped red onion
  • 4 chopped garlic cloves
  • 1tsp Ground Cumin
  • 1/2tsp ground cayenne red pepper
  • 2cups no-salt vegetable broth
  • 2cups white wine
  • 1/2tsp salt
  • 1tsp ground thyme
  • 2 Bay Leaves
  • 1pinch saffron
  • 1lb raw medium shrimp
  • 1lb large scallops
  • 1lb fresh cod fillets
  • 1lb wild catfish fillets
  • 4oz snow crab cocktail claws
  1. Chop all tomatoes.
  2. In large stew pot, heat olive oil over medium. Add onion and garlic and cook until tender, approximately 4 minutes.
  3. Add cumin and red pepper. Stir and cook 1 minute.
  4. Add broth, wine, red tomato, yellow tomato, salt, thyme, bay leaves, and saffron. Stir well to combine.
  5. Simmer, uncovered, 15 minutes.
  6. Remove shell, tails and devein shrimp.
  7. Cut cod and catfish into 1” pieces.
  8. Add shrimp, cod, catfish, and crab to broth mixture and bring to boil over high heat.
  9. Reduce heat to low, cover, and simmer until the seafood is opaque, 10 to 15 minutes.
  10. Serve immediately
