Spicy seafood stew simmered with scallops, shrimp, catfish, and crab

Ingredients
- 1 medium tomato
- 1 yellow tomato
- 1 tbsp Olive Oil
- 1 1/2 cups fresh chopped red onion
- 4 chopped garlic cloves
- 1 tsp Ground Cumin
- 1/2 tsp ground cayenne red pepper
- 2 cups no-salt vegetable broth
- 2 cups white wine
- 1/2 tsp salt
- 1 tsp ground thyme
- 2 Bay Leaves
- 1 pinch saffron
- 1 lb raw medium shrimp
- 1 lb large scallops
- 1 lb fresh cod fillets
- 1 lb wild catfish fillets
- 4 oz snow crab cocktail claws
Instructions
- Chop all tomatoes.
- In large stew pot, heat olive oil over medium. Add onion and garlic and cook until tender, approximately 4 minutes.
- Add cumin and red pepper. Stir and cook 1 minute.
- Add broth, wine, red tomato, yellow tomato, salt, thyme, bay leaves, and saffron. Stir well to combine.
- Simmer, uncovered, 15 minutes.
- Remove shell, tails and devein shrimp.
- Cut cod and catfish into 1” pieces.
- Add shrimp, cod, catfish, and crab to broth mixture and bring to boil over high heat.
- Reduce heat to low, cover, and simmer until the seafood is opaque, 10 to 15 minutes.
- Serve immediately
