Gruyere and Swiss cheeses melted with tomatoes, onion, garlic, and wine

Ingredients
- 2 Medium Garlic Cloves
- 2 tbsp Unsalted Butter
- 2 tbsp garbanzo bean flour
- 1 1/2 cups Dry White Wine
- 1 lb shredded Gruyere
- 1/2 lb shredded Swiss cheese
- 15 asparagus spears cooked tender-crisp
- 2 cups broccoli florets cooked tender-crisp
- 1 lb strip steak cooked to desired doneness, cut into bites
Instructions
- Smash garlic and rub fondue pot or double boiler with it.
- Over medium heat, melt butter.
- Whisk flour into melted butter until smooth.
- Add wine, slowly, stirring constantly to avoid lumps. Continue stirring until mixture starts to simmer.
- Reduce heat to low, add cheese a handful at a time. Stir to melt. Continue until all cheese is melted.
- Place pot over warmer to keep fondue hot. Arrange veggie and steak dippers on a platter, and serve with fondue spears or forks
