  • Cooking Spray
  • 1Cup Chopped Scallions
  • 24Oz Chopped Fresh Spinach
  • 1Tbsp Cornstarch
  • 1/2Cup Half & Half
  • 3Oz Cream Cheese
  • 1/4Cup Sour Cream
  • 1/2Cup Fresh Chives
  • 1/2Tsp salt
  • 1/4Tsp Black Pepper
  • 1/8Tsp Red Hot Pepper Flakes
  1. Wash and mince chives.
  2. Coat large saucepan with cooking spray and heat over medium. Add scallions and cook until tender, approximately 5 minutes.
  3. Add spinach and cook, stirring occasionally, until spinach is just wilted, about 5-8 minutes.
  4. In small bowl, whisk cornstarch and half & half until cornstarch dissolves.
  5. Move spinach to sides of pan and pour cornstarch mixture in center. Cover and stir occasionally until thickened, about 2 to 3 minutes.
  6. Reduce heat to low and stir in cream cheese, sour cream, chives, salt, black pepper, and red pepper flakes. Cook until creamy and heated through, about 5 minutes.
