Ingredients
- Cooking Spray
- 1 Cup Chopped Scallions
- 24 Oz Chopped Fresh Spinach
- 1 Tbsp Cornstarch
- 1/2 Cup Half & Half
- 3 Oz Cream Cheese
- 1/4 Cup Sour Cream
- 1/2 Cup Fresh Chives
- 1/2 Tsp salt
- 1/4 Tsp Black Pepper
- 1/8 Tsp Red Hot Pepper Flakes
Instructions
- Wash and mince chives.
- Coat large saucepan with cooking spray and heat over medium. Add scallions and cook until tender, approximately 5 minutes.
- Add spinach and cook, stirring occasionally, until spinach is just wilted, about 5-8 minutes.
- In small bowl, whisk cornstarch and half & half until cornstarch dissolves.
- Move spinach to sides of pan and pour cornstarch mixture in center. Cover and stir occasionally until thickened, about 2 to 3 minutes.
- Reduce heat to low and stir in cream cheese, sour cream, chives, salt, black pepper, and red pepper flakes. Cook until creamy and heated through, about 5 minutes.
