Collard Greens and Onions Recipe
fresh collard greens
In large stock pot, bring 4 quarts water to boil.
Rinse collard greens well. Tear leaves from center stalk. Chop greens into 1/2″ strips.
Place greens in pot. Return water to boil and cook 4 minutes.
With slotted spoon, remove greens to colander to drain.
Return pot to cook top and heat oil over medium.
Peel and mince onion and garlic.
Add onion and garlic, cook 3 minutes.
Return collard greens to pot and add salt. Cook 3 minutes, stirring occasionally. Serve
