Ingredients
- 4 quart cold water
- 3 lb fresh collard greens
- 1 tbsp vegetable oil
- 1 onion
- 2 garlic cloves
- 1/2 tsp salt
Instructions
- In large stock pot, bring 4 quarts water to boil.
- Rinse collard greens well. Tear leaves from center stalk. Chop greens into 1/2" strips.
- Place greens in pot. Return water to boil and cook 4 minutes.
- With slotted spoon, remove greens to colander to drain.
- Return pot to cook top and heat oil over medium.
- Peel and mince onion and garlic.
- Add onion and garlic, cook 3 minutes.
- Return collard greens to pot and add salt. Cook 3 minutes, stirring occasionally. Serve
