Ingredients

  • 4 quart cold water
  • 3 lb fresh collard greens
  • 1 tbsp vegetable oil
  • 1 onion
  • 2 garlic cloves
  • 1/2 tsp salt

Instructions

  1. In large stock pot, bring 4 quarts water to boil.
  2. Rinse collard greens well. Tear leaves from center stalk. Chop greens into 1/2" strips.
  3. Place greens in pot. Return water to boil and cook 4 minutes.
  4. With slotted spoon, remove greens to colander to drain.
  5. Return pot to cook top and heat oil over medium.
  6. Peel and mince onion and garlic.
  7. Add onion and garlic, cook 3 minutes.
  8. Return collard greens to pot and add salt. Cook 3 minutes, stirring occasionally. Serve
