  • 1/2lb bonelessskinless chicken breasts
  • 2tsp vegetable oil
  • 1cup chopped green bell peppers
  • 3/4cup freshchopped green onion
  • 16oz cannedunsalted diced tomatoes
  • 1/2tsp salt
  • 1/2tsp Garlic Powder
  • 1/2tsp Chili Powder
  • 1/4tsp hot red pepper flakes
  • 1 1/2lb raw medium shrimp
  1. Cut chicken into 1/2-inch cubes.
  2. In large skillet, heat oil over medium. Add chicken. Cook 5 minutes, turning occasionally.
  3. Add green pepper and onion. Cook 2 minutes.
  4. Stir in tomatoes, salt, garlic powder, chili powder, and red pepper flakes.
  5. Bring to boil, reduce heat to medium-low, and simmer 20-30 minutes, uncovered, until mixture thickens.
  6. Add shrimp and return to boil.
  7. Reduce heat. Cook for an additional 3-4 minutes, until the shrimp turns opaque and pink. Serve.
